The subject of this week's Take 5 on the Auburn University homepage is Stacy Brown, founder of Chicken Salad Chick. Stacy, a native of Rome, Georgia, earned a degree in communications from Auburn University in 1999. After her first marriage ended in divorce, she began selling chicken salad out of her home as a way to support herself and her three children. When the Lee County Health Department shut down the operation because it was illegal, family friend and future husband Kevin Brown helped Stacy turn her business concept into a restaurant. The first location, which was take-out only, opened in Opelika in 2008. Now, there are nearly 40 Chicken Salad Chick locations throughout the Southeast, including one that opened in February on Auburn's campus in a new addition to Foy Hall.
