Auburn-based Chicken Salad Chick will open its first college campus location in Auburn University’s Foy Hall on Feb. 10 at 10 a.m. A ribbon-cutting ceremony will begin at 9:30 a.m.

“We are very excited to open our first college location on the Auburn University campus,” said Ali Rauch, Chicken Salad Chick director of marketing. “The restaurant started in Auburn and has truly become an Auburn tradition.”

Chicken Salad Chick is the brainchild of Auburn resident Stacy Brown who set out on a personal quest to find the perfect chicken salad. Along the way, the high demand for her chicken salads led her into the restaurant business. Today, her franchise specializing in a variety of chicken salads, plus gourmet soups and sides, is located in multiple southern states.

The new 2,600 square-foot Foy venue includes wall-to-wall windows overlooking campus, inside seating for 46 people and courtyard seating for an additional 64 guests. This larger venue was specifically designed to meet the needs of a bustling college campus, Rauch said.

“In addition to extra tables, we’ve also added a ‘quick chick’ section for customers who do not have time to dine in. This section will provide
single-serving sides, scoops or salad by the pound for easy grab and go access,” she said.

Dine-in customers will receive their order at the counter instead of the table delivery method used in traditional Chicken Salad Chick restaurants.

“The new order stations will allow us to provide quicker services for students and faculty who want to dine in, but don’t have much time before rushing to class,” Rauch said.

The campus menu will include 10 of the 15 chicken salads featured on the Chicken Salad Chick menu. Rauch recommends first-time customers try the Classic Carol on a croissant roll with a side of broccoli salad.

The Foy location hours are 10 a.m. - 5 p.m., Monday - Friday.
